American groundnut is a native edible root crop. The roots have a unique growth form, developing distinct golf ball sized tubers connected by thinner roots in between them. These tubers can be separated and replanted, or eaten. They must be cooked thoroughly, but once ready, they have a mild and pleasant flavor that is a cross between a potato and a chickpea. We recommend interplanting these with a tall support plant, such as American elderberry, sunchoke, Indiangrass, or big bluestem. These tubers are a cultivar originally developed in Louisiana.
